Process

Healthy olive fruit collection early (October), direct oil extraction, max 30 minutes in the mixer in 27 degrees water temperature, proper storage without: oxygen, light and high temperatures, especially in summer.

These are some simple things, which we are follow, to produce excellent olive oil: ELAiKOS.
